The three things you need to remember:

  • Follow a strict timeline. Make sure you’re watching what you’re cooking. Don’t be afraid to write down the time you start your meat and what temperature it needs to achieve.
  • The love is in the injection and the rub. The injection always needs to be warm before you inject it, according to Beal. The rub needs to be as fresh as you can get it.
  • Above all: start with a good product. You need to choose a good cut of meat to throw on the smoker. If you aren’t sure, don’t be afraid to ask for help!
