Cook this farmers market specialty just right
It is officially farmers market season in the Heartland.
Good news for asparagus lovers, it’s the prime eating season for the crown plant.
You may want to pick up a bunch at the Historic Downtown Sikeston Farmer’s Market.
If you plan on serving it at dinner sometime soon, you may want to toss it in the oven.
Here’s the recipe of the week: oven roasted asparagus.
2 pounds thick asparagus, with the woody ends snapped off
2 teaspoons extra virgin olive oil
Freshly ground pepper
1 teaspoon fresh thyme leaves
Fresh lemon juice
Preheat the oven to 400 degrees.
Oil a baking sheet large enough to hold the asparagus in one layer.
Place the asparagus in the dish, and toss with the olive oil, salt and pepper.
Place in the oven and roast for 10 to 15 minutes, until the stalks begin to shrivel and color lightly.
Remove from the heat, toss with thyme and season with lemon juice if desired.
